What makes a frita a frita
Havana's street-cart burger, carried to Miami and made famous on Calle Ocho. Here is how we build ours.
- The bunSoft Cuban bread from a local Cuban bakery, buttered and toasted on the flat-top.
- The pattyBeef seasoned with chorizo, garlic, paprika and cumin, pressed thin so the edges crisp.
- PapitasA tall pile of crispy shoestring potatoes. Non-negotiable.
- Onion & sauceDiced raw onion and our house frita sauce.
- A caballo"On horseback." Add a fried egg, tostones, sweet plantain, bacon or cheese.

The Magic Box is our kitchen on wheels, with a 36-inch gas flat-top and a fryer on board. We park, fire up and cook every frita to order, so your guests get them hot off the griddle instead of out of a chafing dish.

We cooked the Burger Bash

What is a Cuban frita?
A frita is Cuba's take on the hamburger: a thin beef patty seasoned with chorizo and Cuban spices, cooked on a flat-top, served on a soft Cuban bun with onions, frita sauce and a big handful of crispy shoestring potatoes. It became a Miami icon on Calle Ocho.
Do you cater outside Miami?
Yes. El Gringo de las Fritas is a mobile caterer and we book events throughout Florida, from Miami and the Keys to Orlando, Tampa, Jacksonville and the Panhandle. Travel details are confirmed with your quote.
Do you have vegetarian options?
Yes. Every frita comes in traditional beef, chicken or veggie, and we can add a griddled zucchini frita with charred tomato salsa for vegetarian guests.
Is the food cooked on site?
Yes. The Magic Box trailer has a full flat-top and fryer, so fritas, papitas, tostones and croquetas are cooked to order at your event.
